Peanut Butter

Ingredients

  • 120g Pip & Nut Peanut Butter of choice
  • 100g melted butter - slightly cooled

  • 2 eggs - beaten

  • 160g plus 1 tbsp soft light brown sugar

  • 250g ripe bananas (peeled weight) - mashed

  • 180g plain flour

  • 2.5 tsp baking powder

  • 1 tsp salt

  • 100g dark chocolate - roughly chopped

Method

Preheat the oven to 160C. Butter a 450g/1lb loaf tin and line with baking parchment.

Mix the melted butter with the eggs and sugar. Beat in the peanut butter and mashed bananas.

Sift the flour, baking powder and salt into a separate bowl, then gradually fold into the banana mixture.

Stir in the chopped chocolate.

Spoon into the prepared loaf tin.

Bake for 55 minutes, or until a wooden skewer inserted into the centre comes out clean.

Leave to cool in the tin for 10 minutes, then turn out onto a wire rack.

Best served with an extra spoon of Sweet & Salty Peanut Butter.
