Satay salad dressing

Ingredients

2 tbsp Greek yogurt

1 tsp mild curry powder

1 tsp maple syrup or honey

1 tbsp soy sauce or tamari

1 tbsp lime juice

2-4 tbsp warm water (to loosen)

1 tsp sesame oil

Pinch of salt

1 cup baby spinach

1 cup watercress

1 cup cooked quinoa

1 small carrot - julienned

1/2 cucumber - sliced into half-moons

1/2 cup edamame

200g firm cooked tofu - cubed
Method
Add Greek yogurt, curry powder, maple syrup, soy sauce, lime juice, and sesame oil to an almost empty peanut butter jar (about 1-2 tbsp left).
Shake until smooth and creamy.
Add warm water a little at a time until you reach a pourable consistency.
Season to taste with salt.
