Make the most out of jar, with jar dressings.
This is our creamy satay salad dressing that goes with a tofu, edamame and grain bowl.
Ingredients:
- 2 tbsp Greek yogurt
- 1 tsp mild curry powder
- 1 tsp maple syrup or honey
- 1 tbsp soy sauce or tamari
- 1 tbsp lime juice
- 2 - 4 tbsp warm water (to loosen)
- 1 tsp sesame oil
- Pinch of salt
Dressing:
- Add greek yogurt, curry powder, maple syrup, soy sauce, lime juice, and sesame oil to an almost empty peanut butter jar (about 1-2tbsp left).
- Shake until smooth and creamy.
- Add warm water a little at a time until you reach a pourable consistency.
- Season to taste with salt.
Salad:
- 1 cup baby spinach
- 1 cup watercress
- 1 cup cooked quinoa
- 1 small carrot, julienned
- ½ cucumber, sliced into half-moons
- ½ cup edamame
- 200 g firm cooked tofu, cubed
