Satay salad dressing

Make the most out of jar, with jar dressings. 

This is our creamy satay salad dressing that goes with a tofu, edamame and grain bowl. 

Ingredients:

  • 2 tbsp Greek yogurt
  • 1 tsp mild curry powder
  • 1 tsp maple syrup or honey
  • 1 tbsp soy sauce or tamari
  • 1 tbsp lime juice
  • 2 - 4 tbsp warm water (to loosen)
  • 1 tsp sesame oil
  • Pinch of salt

Dressing:

  • Add greek yogurt, curry powder, maple syrup, soy sauce, lime juice, and sesame oil to an almost empty peanut butter jar (about 1-2tbsp left).
  • Shake until smooth and creamy.
  • Add warm water a little at a time until you reach a pourable consistency.
  • Season to taste with salt.

Salad:

  • 1 cup baby spinach
  • 1 cup watercress
  • 1 cup cooked quinoa
  • 1 small carrot, julienned
  • ½ cucumber, sliced into half-moons
  • ½ cup edamame
  • 200 g firm cooked tofu, cubed
