Think of this as a deconstructed version of the classic fig and goat’s cheese salad, but served on top of a really crusty piece of toast. You can get all cheffy with this recipe by drizzling the honey from a great height.
• 2 slices of bread of your choice
• 4 Tbsp almond butter
• 2 figs, quartered
• 100g goat’s cheese
• 2 Tbsp honey
Toast the bread slices, then spread immediately with the almond butter, top with the fig quarters and crumble over the goat’s cheese. For the final touch, drizzle the honey on top.
PIP’S TOP TIP:
Figs are in season late summer in the UK so if you struggle to get your hands on them, you can can replace with some slices of pear on top.
