We like to think of these pick and mix protein balls as the ‘choose your own adventure’ of the recipe world.
Mix and match from the ingredients below to whizz up an endless amount of snacking possibilities.
Makes about 12-15 balls. Takes 15 minutes
Ingredients:
Base Ingredients
- 60g raw almonds
- 120g dates
- 40g dried cherries
Pick Your Nut Butter (2 tablespoons)
Pick Your Filler (2 max)
- 20g coconut flakes
- ½ tablespoon maca powder
- ½ tablespoon lucuma powder
- 20g chopped nuts (pecans, macadamia, pistachio)
- 1 tablespoon chia
- 1 tablespoon cinnamon
- 1 tablespoon cacao
- 20g chopped dried apple
Pick Your Topping (one max)
- Sesame seeds
- Cocoa
- Finely chopped pistachios
- Finely chopped mixed nuts
- Desiccated coconut
- Cacao nibs
Method
Blitz all the base ingredients in a food processor for 3-5 minutes or until it forms a sticky dough in your machine.
Pick your nut butter of choice and ‘filler’ (we recommend a max of two fillers per mixture) and add to the blender and blitz until combined. This time round you want it to combine, but not completely puree the mix, as a little bit of texture is good - so be sure to keep an eye on it.
Take a small part of the ‘dough’ and roll in between your hands to make a small, golf ball size bite. Pick your topping and spread onto a large plate and roll each ball around until it is nicely coated.
Store these little balls full of plant-based protein in a Tupperware box for up to 1 week in the fridge.
