One of our fav plant based creators, Veganezer, has whipped up this tasty peanut butter and jam pancake recipe for you to enjoy this Pancake Day and beyond!
Ingredients
Batter:
- 1 banana
- 200ml soy milk
- 100g oats
- 1 tsp baking powder
- 1 tsp cinnamon
- Pinch of salt
Topping:
- Smooth Peanut Butter (or any peanut butter of choice!)
- Strawberry jam
Method
- In a blender add the batter ingredients and blend until smooth.
- Heat up a pan on medium heat and add a touch of oil.
- Spoon in your batter into pancake sized circles and allow to cook 2-3 mins then flip and repeat until cooked.
- Stack them up then add some PB & J then enjoy!
