Classic Fluffy Pancakes

These classic American, fluffy pancakes are best stacked high and topped with fruit and Sweet & Salty Peanut Butter for the ultimate Pancake Day indulgence.


  • 175g self-raising flour, sifted
  • 180ml milk
  • 1 egg
  • 2 tbsp golden caster sugar
  • Sweet & Salty Peanut Butter of choice
  • Fresh strawberries
  • Handful of chocolate chips for a cheeky final topping (optional)
  • Coconut oil


1. Whisk together the milk and egg then fold in the flour and sugar.

2. Heat coconut oil over a medium-high heat in a frying pan.

3. Add a tablespoon scoop of mixture at a time and cook on one side until the shine of the mixture disappears (around 3-5 minutes).

4. Once the shine disappears flip over and cook the otherside. Fry until oth sides are golden.

5. Top with lashings of peanut butter and your choice of toppings.
