Fixing boring porridge is our thing. This big, creamy panful is ready in 15 minutes, designed for morning people, school-run scramblers and anyone who believes porridge deserves better. Spoon into bowls, crown with a bright berry-orange compote, and finish with a generous dollop of crunchy peanut butter. Obviously.
Ingredients:
Porridge:
- 300g rolled oats
- 1.2 litres whole milk (or a milk + cream combo for extra richness)
- 200ml water
- Pinch of salt
- 2 tbsp brown sugar or maple syrup (optional)
- 1 tsp vanilla extract
Berry & Orange Compote:
- 150g mixed berries (fresh or frozen)
- Zest and juice of ½ an orange
- 1–2 tsp sugar
Method:
- Add oats, milk, water, salt, sugar (if using) and vanilla to a saucepan.
- Cook over a gentle heat for 10–12 minutes, stirring often until thick, creamy and dreamy.
- Meanwhile, make the compote: combine berries, orange zest, juice and sugar in a small pan.
- Simmer for 5–7 minutes until saucy.
- Serve the porridge in warm bowls, spoon over the compote and finish with a big spoon of crunchy peanut butter.
