Ingredients:

Porridge:

  • 300g rolled oats
  • 1.2 litres whole milk (or a milk + cream combo for extra richness)
  • 200ml water
  • Pinch of salt
  • 2 tbsp brown sugar or maple syrup (optional)
  • 1 tsp vanilla extract

Berry & Orange Compote:

  • 150g mixed berries (fresh or frozen)
  • Zest and juice of ½ an orange
  • 1–2 tsp sugar

Method:

  1. Add oats, milk, water, salt, sugar (if using) and vanilla to a saucepan.
  2. Cook over a gentle heat for 10–12 minutes, stirring often until thick, creamy and dreamy.
  3. Meanwhile, make the compote: combine berries, orange zest, juice and sugar in a small pan.
  4. Simmer for 5–7 minutes until saucy.
  5. Serve the porridge in warm bowls, spoon over the compote and finish with a big spoon of crunchy peanut butter.

Porridge perfected.
