Quick Creamy Porridge with Berry & Orange Compote

Spoon into bowls, crown with a bright berry-orange compote, and finish with a generous dollop of crunchy peanut butter. Obviously.

Ingredients

  • Porridge
  • 300g rolled oats

  • 1.2 litres whole milk (or milk and cream combo)

  • 200ml water

  • Pinch of salt

  • 2 tbsp brown sugar or maple syrup (optional)

  • 1 tsp vanilla extract

  • Berry & Orange Compote
  • 150g mixed berries (fresh or frozen)

  • Zest and juice of 1/2 an orange

  • 1-2 tsp sugar

  • To Serve
  • Crunchy Peanut Butter

Method

Add oats, milk, water, salt, sugar (if using) and vanilla to a saucepan.

Cook over a gentle heat for 10-12 minutes, stirring often until thick and creamy.

Meanwhile make the compote: combine berries, orange zest, juice and sugar in a small pan.

Simmer for 5-7 minutes until saucy.

Serve the porridge in warm bowls, spoon over the compote and finish with a big spoon of crunchy peanut butter.
