Quick Creamy Porridge with Berry & Orange Compote
Fixing boring porridge is our thing. This big, creamy panful is ready in 15 minutes, designed for morning people, school-run scramblers and anyone who believes porridge deserves better. Spoon into bowls, crown with a bright berry-orange compote, and finish with a generous dollop of crunchy peanut butter. Obviously.

Ingredients
- Porridge

300g rolled oats
-
1.2 litres whole milk (or milk and cream combo)

200ml water
-
Pinch of salt
-
2 tbsp brown sugar or maple syrup (optional)

1 tsp vanilla extract
- Berry & Orange Compote
-
150g mixed berries (fresh or frozen)

Zest and juice of 1/2 an orange

1-2 tsp sugar
- To Serve
- Crunchy Peanut Butter
Method
Add oats, milk, water, salt, sugar (if using) and vanilla to a saucepan.
Cook over a gentle heat for 10-12 minutes, stirring often until thick and creamy.
Meanwhile make the compote: combine berries, orange zest, juice and sugar in a small pan.
Simmer for 5-7 minutes until saucy.
Serve the porridge in warm bowls, spoon over the compote and finish with a big spoon of crunchy peanut butter.
