We like to think of these pick and mix nut butter energy balls as the 'choose your own adventure' of the recipe world. Mix and match from the ingredients below to whizz up an endless amount of snacking possibilities. Makes about 12-15 balls. Takes 15 minutes.

Ingredients

  • Base
  • 60g raw almonds

  • 120g dates

  • 40g dried cherries

  • Pick Your Nut Butter (2 tbsp)
  • Pip & Nut Almond Butter

  • Pip & Nut Peanut Butter

  • Pip & Nut Coconut Almond Butter

  • Pick Your Filler (2 max)
  • 20g coconut flakes

  • 1/2 tbsp maca powder

  • 1/2 tbsp lucuma powder

  • 20g chopped nuts (pecans, macadamia, pistachio)

  • 1 tbsp chia seeds

  • 1 tbsp cinnamon

  • 1 tbsp cacao

  • 20g chopped dried apple

  • Pick Your Topping (one max)
  • Sesame seeds

  • Cocoa powder

  • Finely chopped pistachios

  • Finely chopped mixed nuts

  • Desiccated coconut

  • Cacao nibs

Method

Blitz all the base ingredients in a food processor for 3-5 minutes until it forms a sticky dough.

Add your chosen nut butter and up to 2 fillers and blitz until combined - keep some texture, don't fully puree.

Take a small amount of dough and roll between your hands to make a golf ball-sized bite.

Spread your chosen topping on a large plate and roll each ball until nicely coated.

Store in an airtight container in the fridge for up to 1 week.
