Peanut Butter, Chilli, Lime and Coriander on Toast

Apparently when you eat chilli a burning sensation is sent from the nerve endings in the mouth to the brain. The body defends itself against this pain sensation by secreting endorphins – natural painkillers that cause a physical “rush” – a high that keeps us craving more. So, depending on how much of a chilli junkie you are, you might need to up the ante on this one and keep the seeds in the chilli for more heat.

Ingredients

• 2 slices of brown seeded or multigrain loaf
• 4 Tbsp peanut butter
• ½ red chilli, deseeded and very finely chopped
• Handful of coriander, leaves only
• ½ lime

Method

Toast the bread slices then immediately spread with the peanut butter. Sprinkle with the chopped chilli and coriander (cilantro) leaves, and squeeze a quarter of lime over the top of each.
