Marinated Strawberries and Almond Butter Sourdough
The savoury edge from the almond butter, sweet honey, salty sourdough and tart lemon makes this a real crowd-pleaser. Plus saying that you marinated your strawberries makes it sound rather fancy - it's a win-win situation.

Almond Butter

Ingredients
- 8 tbsp Pip & Nut Almond Butter

Juice of 1 lemon

1/2 vanilla bean pod - split and seeds scraped

About 1 tbsp honey

250g strawberries - hulled

2 large slices sourdough bread (halved) or 4 regular slices

2 tsp pumpkin seeds (optional)
Method

Mix the lemon juice, vanilla seeds and honey in a bowl. Taste and add more honey if too tart.

Slice the strawberries into heart-shaped slices and add to the syrup. Mix until well coated.

Toast the sourdough then immediately spread generously with almond butter.

Add the strawberry mixture and top with pumpkin seeds if using.
