Gingerbread Almond Butter Truffles
These gingerbread almond butter truffles are rich and decadent, but also super easy to make. They would make a fantastic homemade festive gift.

Ingredients

225g Pip & Nut Gingerbread Almond Butter (or regular Almond Butter)

70g coconut oil (plus extra to grease)

40g light muscovado sugar

225g dark chocolate
- To Coat

Raw cacao powder

Chopped roasted almonds or pistachios

Toasted sesame seeds
Method

Grease a 20x20cm tin with coconut oil.

Heat the coconut oil on a low heat. Add the sugar.

Take the pan off the heat and add the almond butter and chocolate. Stir until smooth.

Pour the mixture into the tin and chill in the fridge for about 2 hours until set.

Cut into 1.5x1.5cm cubes.

Roll the truffles in your chosen coating.
Keep truffles in the fridge as they will melt over time.
