Bettina's Peanut Butter Chocolate Clusters
These easy, vegan, no-bake chocolate, peanut butter clusters by our friend, and chef, Bettina are the perfect afternoon treat. This recipe can be personlised to suit your tastes by swapping out her ingredient suggestions with your choice of nut butter, dried fruit or nuts. Delicious!

Ingredients

- 5 tbsp Pip & Nut Crunchy Peanut Butter

25g sunflower seeds

25g hazelnuts - roughly chopped

25g almonds - roughly chopped

25g digestive biscuits - broken into pieces

2 medjool dates - pitted and chopped

1/2 tsp cinnamon

200g dark chocolate - melted

1 tbsp coconut oil
Method
Line a baking tray.
Add all ingredients except the chocolate and coconut oil to a large bowl and mix until you have a sticky consistency.
Spoon tablespoonfuls of the mixture onto the baking tray, spreading into clusters. Do not worry about neat shapes.
Melt the chocolate with coconut oil over a low heat, mixing well.
Drizzle 1 tbsp melted chocolate over each cluster.
Put the tray in the fridge or freezer until the chocolate hardens.
