Bettina's Peanut Butter Chocolate Clusters

These easy, vegan, no-bake chocolate, peanut butter clusters by our friend, and chef, Bettina are the perfect afternoon treat. This recipe can be personlised to suit your tastes by swapping out her ingredient suggestions with your choice of nut butter, dried fruit or nuts. Delicious!

 Ingredients:
  • 5 tbsp Crunchy Peanut Butter
  • 25g sunflower seeds
  • 25g hazelnuts, roughly chopped
  • 25g almonds, roughly chopped
  • 25g digestive biscuits, broken into pieces
  • 2 medjool dates, pitted & chopped
  • ½ tsp cinnamon
For the Topping:
  • 200g dark chocolate, melted
  • 1 tbsp coconut oil 
Method:

Line a baking tray.

Add all ingredients, except the chocolate & coconut oil, together in a large bowl and mix to combine until you have a nice sticky consistency.

Spoon a tablespoonful of the mixture at a time and spread the clusters evenly across the baking tray, don't worry about these being neat ball shapes.

Melt the chocolate with coconut oil over a low heat, mixing well.

Once melted, drizzle 1 tbsp melted chocolate over each cluster.

Put the tray of clusters in the fridge or freezer until the chocolate hardens.
